Block options
Good morning people, I obviously have a small problem with the issue of permissions, I cannot prevent a profile from having the possibility of modifying the conditions "Category" and "Type" of the ticket, does anyone have an idea which option I should uncheck to that they can't change it.

You cannot prevent changes to those specific fields, only to the entire ticket.

You could always make a custom plugin for it (not aware of one already made). It would require PHP knowledge and a least a little knowledge of the GLPI code and/or ability to reference other GLPI plugins which are open-source.
There is an extensive list of "hooks" for plugins that let them modify data or listen for events in GLPI such as removing changes from update operations.
You could add new permissions for fields and then remove the changes if the user doesn't have permission.
