I am wanting to have my technicians assign tickets / changes to certain assets upon entering a ticket. This is currently not possible.
Additionally, I would like to be able to select *multiple* assets at once and assign them to a ticket or a change.
Lastly, I would like to create asset groups and assign those groups to incidents / changes (instead of having to assign individual assets).
Can anyone comment on this, please?

check technicians profiles if these assets are in the list :
administration>profiles>[technician profile]>assistance (tab)>
Link with items for the creation of tickets My devices =YES - All items
Associable items to a ticket : "select your assets"
for changes, you can't associate asset upon creating change, you should add in in a second step

I'm pretty sure you can't, unless you write a plugin.
