i want to change content of ticket email.
there are items which we don't need in the ticket email.

we don't need these fields in email

how i achieve that, i did not find any templates for this case in backend.

Write your own template.
In my case I created new notification for new, close and update ticket.
For each one, I used a new specific template.
So I'm sure what will be sent.

Notifications are create in configuration/ notifications where you can add/manage notifications (the event) and the template (your mail)

When i add a new template, then where can i modify the content of the template , there is no option for this issue.
is the template hardcoded editable over FTP?

Go to
Setup -> notification
First of all be sure that enable followup and followup via email are set to yes
Then notification templates and select the one you need (tickets for eg).
then "template translation" and "default translation"
