Dear,
Is there any way to remove the Urgency field profile Self-Service?

You could use a Business Rule that changes the urgency to whatever you need it to be when a user with that profile opens a ticket.
Profile isn't a choice for a rule criteria, but you could all all users of self-service to a group and run the rule off of that.

You can edit or create a ticket template and hide the fields you don't want to show.
