Is it possible to delete the default category of --- or reassign a new default?
I don't want my users to be able to use a blank ticket category.

Dear Friend,
I'm new here, but I think can help.
Two options:
1 - Place the category as required, on tickets.
2 - Edit the file "\front\ticket.form.php", line 199, change the default ID of "ticketcategories_id".
Note: Be careful when changing the php files, make a backup before.
Note 2: Use a php editor.

That works to a point, which I thank you for!
It changes the default, but doesn't actually remove the --- category.
Based on your post, I am assuming I'd need to find and remove it from the database...

Ok..This didn't change anything for a post-only profile.
The page in question is: /front/helpdesk.public.php?create_ticket=1
