Use case, for example, whenever the end-user raises a ticket, and the team lead assigns it to any engineer. For privacy, we don't need to show the customer who is solving his/her issue. so for the Customer Profile we have to hide that column.

Hiding the column is not going to accomplish what you are asking. They can still see the technician in their tickets.
Since GLPI 9.5, there has been a feature to enable anonymization of technicians for simplified interface users. Refer to the "Assistance" tab for your entities in Administration > Entities.

we are using glpi 11 version, can hide "assigned to technician" name of technician from Customer profile?

Can you please describe how that work ?
I've tested with on GLPI 10.0.18 and enable the anonymization using parameters " Replace agent and group name with a generic name".
When I log as a post only user (simplified interface) I still see the username and group name for the ticket from this entitie.
Should I activate something else ?
