Gibberish words instead of language words

Hey,
I recently installed GLPI and I'm attempting to open tickets by sending emails to the connected IMAP. However, the words are coming in as gibberish instead of the correct Hebrew language.

Example:
áãé÷ä áãé÷ä äôòí òí úîåðä #1726bf7e-b2d8e96f-66828a071f1513.75283159# (10)

Can you please advise?
