I am looking for some way to have the ticket status remain visible, but technicians will only be able to change it via a follow-up rather than the drop-down

You can use ticket templates to hide the regular status field, but there is no ability to change status from followups anymore unless you use the "Split Action Timeline Button (STAB)" plugin (or are on an old GLPI version).
