Would there be any way for Employees to open anonymous tickets in GLPI, if there is an option General > Assistance > Allow Opening of Anonymous Tickets.
but I can't find a link to create a butcher shop or even check the options it has.
In relation to Users Is there any way for the User to create their account without needing help from the IT department and enter their password, email etc.

According to the GLPI user documentation, users can create tickets anonymously at https://your_glpi_url/front/helpdesk.html (/front/helpdesk.php also works).

User accounts can be automatically created/linked to external authentication sources like Active Directory.

When you add an LDAP/Active Directory server in GLPI, your users can log into GLPI with their domain username and password. If GLPI doesn't know the user yet, it will check the active AD server(s) if there is an account with a matching username and password. If so, GLPI will use the information in AD to create an account. Then, the authorization assignment rules will run (Administration > Rules) which can dynamically give the user different permission profiles and entity access depending on several criteria. In this configuration, the user's password is never actually stored in GLPI's database and GLPI will always send the credentials to the AD server to validate them.
