Call screen authors

Good morning,

Can anyone help me with a question, within the calls in the Authors tab there are three options, (Requester / Observer / Assigned), by default GLPI takes all registered users and groups, my question is? As an example, the Applicant can I leave only the users that import from AD, removing the GPLI users and the groups that appear?
Doing this with the Requester if possible would replicate it to the Observer and Assignee.

You cannot limit the available user options by sync type. You could simply disable the default GLPI user accounts. That would hide them as options, and then you just need to re-enable them as needed.
You can hide all groups by adding "requester group", "observer group" and "assigned group" as hidden fields in your ticket template(s) which are accessible through the "Templates" button on top of any ticket page.
