Where can I set a default entiny when creating a new ticket?

the default entity with which a ticket is created is the one in which the User is positioned at the time of creating the ticket

If you create a ticket from a form (Plugin Formcreator) you can choose in which entity the ticket should be created.

As far as the creation of a ticket is an attribute of who creates it and therefore the ticket is created in the subentity in which the User is positioned or in the subentity that he chooses when using the standard interface that allows you to choose in which subentity to generate the ticket.
If you want all tickets to be created in a specific subentity. What I would do would be to install the formcreator plugin and then create a public form which does not require a GLPI User to create tickets. That form can be configured so that all tickets are created in the subentity you need.
