Hello,
There seems to be an issue when assigning a category to "Incident" Type tickets.
I have searched for keywords but did not find anything related to this issue.
When a ticket has the "Incident" type, the category field cannot be searched. However, when the ticket is of type "Request", we are able to type and search categories.
It seems that the search bar "hides" when changing from "Request" to "Incident".
Specifications:
- GLPI 10.0.5
- Installed from official GitHub tar.gz file
- Oracle Linux Server 8.6
- Apache/2.4.37
- PHP 8.0.22
- mysql Ver 15.1 Distrib 10.6.11-MariaDB
- GLPI 10.0.5 (/glpi => /var/www/html/10.0.5/glpi)
Installation mode: TARBALL
Current language:en_GB

I guess you have defined the categories only visible for requests.
Check your categories and verify that they are also visible for incidents.
