To do this I went into SETTING> AUTHENTICATION> SETTING AUTHENTICATION> GLPI server time zone.

User timezone is not manage in GLPI yet.
It will be possible in 0.85 version.
Time zone setting in GLPI is only used for LDAP sync of users
