Changing notification email text

How do you change the email text (subject, body, etc) for notification emails sent by the system, in particular related to the ticketing system?

GLPI 0.80.61
Ubuntu Server 10.04
php 5.3.2-1ubuntu4.11 with imap
mysql   Ver 14.14 Distrib 5.1.41, for debian-linux-gnu (i486) using readline 6.1

Setup / Notifications / Notification Templates

Tips : create your own notification (don't change the ones provided by GLPI, keep them for example)

I saw that and am looking at it, but is there a reference for the variable names glpi uses anywhere and how they're used to know how to construct the message properly with the content we want?
