What field should be used to connect employees and material that they use (phones, computers, etc) ?

You want to mean : how to indicated the user of a material ?
If yes, you can use the field "User" but in the dropdown you only have users with rights to connect in GLPI.
Lot of enterprises use the field "Contact"
