document folders

does anyone know in which folder glpi stores the documents, for example images, that are added to the documents part of glpi?

Yes. The files folder is inside your GLPI installation. Refer to the update documentation for more information on the locations of data inside your GLPI folder which are unique to your instance and therefore should be backed up, and then restored in the event of a migration/update.

Inside the "files" folder are folders based on the file type, then based on a hash prefix, and then finally named by the hash of the content.
