Hello,
we still have version 0.83 in use, and I have now tried to install version 10.0.2 on a new server and import the old data. Unfortunately, this does not work properly, because I get the message that the version would be smaller than 0.80. (Upgrade is not supported before 0.80!)
I think we started using GLPI with 0.78 long before my time in the company, and it was unfortunately only updated to 0.83 over the years. Is there a way to do the upgrade anyway, or do I have to go up the version here in small steps bit by bit? If I have to do that, where do I get the necessary GLPI versions? Version 1.x to 8.x are missing on the Git page.

You can download an older version like 9.2, run the upgrade, and then try the upgrade to 10.0.2. You would have to handle upgrading the PHP and database versions in multiple stages too probably because of how old your GLPI currently is and the different requirements needed for the newer versions of GLPI.
There are no 1.X.X - 8.X.X versions of GLPI. Since it stayed in 0.X.X for so long and there were a lot of changes in the 9.1 version, they changed the "major" version from 0 to 9 since a 1.0.0 version wouldn't accurately reflect the vast history and changes GLPI had at that point.
