Probably should talk about which version you're going from and to, but I just do this:

In Linux, I unpack the tar, and then overwrite my glpi directory with the glpi directory that was unpacked.
Now using 0.78.1 on CentOS.

Upgrade to 0.78.1 is like to upgrade 0.72 to 0.78 : you copy files, you connecte to glpi and you leave glpi make its work
CentOS 6.5 - CentOS 7.x
PHP 5.6 - PHP 7.x - MySQL 5.6 - MariaDB 10.2 + APC + oOPcache
GLPI from 0.72 to dev version
Certifiée ITIL (ITV2F, ITILF, ITILOSA)

Yeah, the upgrades really go pretty easily.
