change or add "watcher" in several tickets at the same time

Problem 1
How can I change or add the "watcher" in several tickets at the same time? My idea would be to select a few tickets and change or add the "watcher".

Problem 2
I would like a person to be able to view their tickets and other specific users. What would be the best option?

I use group and one user is supervisor.
each user can see his tickets and supervisor has a profile  that can see Group Tickets"

I use also behavious plugin that can add user's group in ticket requestergroup.

it works.
