I do not see the default fields list option, regardless of who I login as - post-only, admin, super-admin. Any ideas where to look?
It would seem it should be under Setup, but it is not.
Otherwise - how can I set default views for search for a specific profile. Currently, when an admin logs in and clicks on Assistance > Tracking it defaults to showing all tickets for the group instead of just the tickets that are assigned to that person.

I was able to get post-only profile to default view to "Not Closed" tickets instead of all (which I would recommend to be a default setting), but I had to modify the source.
From the documentation it seems there is a feature to do this, but it is not appearing on my menu.

I too am having this problem. I would love to modify the Default Fields list and can't seem to find it anywhere. The online documentation says there is an option, but I can't find it no matter who I am logged in as.
Any ideas?

I too need to change the default view for customers with post-only profiles to show "not closed" tickets instead of all. The post-only profiles do not have a "bookmark" function on the Helpdesk interface like you have on the Control Center interface so they cannot customize this view. Is there anything I miss?

In /<glpi_root>/front/helpdesk.public.php you can change
if (!isset($_GET["status"])) $_GET["status"]="all";
to
if (!isset($_GET["status"])) $_GET["status"]="notold";
