I Want To customized ticket template,, so kindly help me to know about this

check your profile :
administration>profiles>[Myprofile]>assistance TAB

set rights for tickets templates>create update purge read

log out, log in ( to relaoad your new profile)

assistance>tickets

you should see Under top menu (same row as profile and entity, left side) : 3 icons => add, search, template

I know this steps but in manage template there is standard interface and simplied interface... i want to change the fields in that interface and want to delete some fields from that interface template.... so please help me for this

you cant add fields with templates (use fields plugin instead)
with Template , use "hidden fields" TAB to hide some fields

if you really want to have custom form for ticket créations, use formcreator plugin

with form Creator, you can set a destination for forms this means a ticket :

Ticket description contains some (or all) question/answers,
ticket category, priority, techniciens, associated elements can be set from form.
